Chicken Parmagiana

Ingredients:

  • 1-1.5 pound. of thinly sliced boneless, skinless chicken breasts
  • 1 beaten egg
  • 2 cups of Italian breadcrumbs
  • 1/4 cup of grated Parmesan cheese
  • 4 slices of mozzarella cheese
  • 1 cup of tomato sauce
  • salt and pepper to taste
  • 1 cup oil
Directions:

Preheat oven to 425. Combine breadcrumbs with cup of Parmesan cheese.Lightly sprinkle breasts with salt and pepper.  Dip chicken in egg mixture then add to bread crumbs(push firmly to embed the bread crumbs) Fry chicken on stove-top in oil until golden brown on both sides. Place chicken in a baking pan lightly coated with tomatoe sauce. Add more sauce on top followed by mozzarella cheese. Bake in oven until cheese is melted. Add more sauce and serve hot with your favorite pasta.
